I am trying to be creative without spending much money.  So, I thought I would ask some of my blogger friends in town if they could help out. I have been a little MIA lately. 2 MONTHS acutally!! Things have gotten ridiculously busy and it shows no signs of slowing down. We are mastering our routine for the fall and soon the Chrismas play at church will be starting... so we will go all out of whack yet again. I thought just a little update in pictures would be a good idea and maybe, just maybe, I would get back into the swing of blogging again. I sure have missed it, but haven't missed reading all the blogs I enjoy reading. I have still gotten on the catch up on everyone else's business... but haven't relayed mine. So... here goes. &lt;div&gt;&lt;div&gt;&lt;div&gt;&lt;br /&gt;At the end of July my in-laws moved backed home to T-town just across a main street from us. We have spent so much time with them since they have moved back and I have loved every second of it. My mother-in-law has quickly become one of my closest friends... believe it or not. They have been fabulous as well to have around for Lillee's sake. She loves her "papa-bob" and "mama di" dearly. Since they've been here we've frequented the zoos, parks, and playgrounds.&lt;br /&gt;&lt;br /&gt;&lt;div&gt;In August, we celebrated my birthday by making a week long trip out to Branson. We had a fabulous time... just my husband and I. LOVED IT!! We went to Silver Dollar City, saw Noah the Musical, and also took a romantic dinner cruise down one of the lakes. Can I just tell you that Noah the Musical was absolutely INCREDIBLE!!? The second half of the play you find YOURSELF in the ark. The set wraps around you about 300 degrees. If you have a chance to ever see it...don't question, just do it. Marc also took me on an awesome dinner cruise on the night of my birthday. We had an all you can eat dinner and dessert while we coasted Lake Tanneycomo. It was gorgeous. The captain stopped so we could enjoy a fire and water show on the coastline. The best time on our trip was spent dreaming. We stayed up every night until wee hours of the morning, something we handn't done since we were dating, just talking and dreaming. We discussed things for our future, our ministry future, and ways right now we could impact our community through our ministry at Fairlawn. (Be looking for future blogs about this one!) &lt;/div&gt;&lt;br /&gt;&lt;div&gt;September has shown itself to be a busy month as well. We took on painting the outside of our house and just spruceing up a bit in the yard. It was much needed, believe me. I've found myself at garage sales to help make the inside of our house more of a home. I've enjoyed more arts and crafts to pretty up the kitchen and new eat-in kitchen area. I'm sooo excited about that! MOPS has started back up... thank goodness! Miss Mae is attending a library class and we are looking into getting her started in tumbling. How cute would she be in a leotard and leg-warmers?? &lt;/div&gt;&lt;br /&gt;&lt;div&gt;I'm so excited to begin a new ministry at our church. I got the idea from a dear friend of mine at &lt;a href="http://guffeyfamily3.blogspot.com/"&gt;Two Men and a Lady&lt;/a&gt;. She started a group called "Dishing Diva's." They get together and share recipes while sharing the food. I'm going to use that same idea... thanks Lindsey!... and add in a little prayer as well. It's going to be called "Potlucks and Prayers." I found this awesome quote recently that will be our theme, "Christ is the center of our home, a guest at every meal, and listener of every conversation." I'm so excited to get this started. I can't wait to share meal ideas, get more ideas, as well as pray with my fellow sisters. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;Here are some recent pics of my little one. She is 21 months old now! Thought I would brag on myself for a second and share the wealth with my 6 whole blogging friends! I found this recipe in an old Pampered Chef Season's Best Cook Book Pamphlet "thingy." It's the Fall/Winter 2004 edition. I made it using Betty Crocker's new GLUTEN FREE devils food cake mix... but it could be made with any mix. The dessert aimed to please for sure. It was super yummy and looked even better. &lt;img id="BLOGGER_PHOTO_ID_5364725345207592514" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 240px; CURSOR: hand; HEIGHT: 320px; TEXT-ALIGN: center" alt="" src="http://3.bp.blogspot.com/_FierqiRafWw/SnNVRyaiJkI/AAAAAAAAAF0/wa6rwojXbjQ/s320/SuMmEr+09+010.JPG" border="0" /&gt;&lt;/div&gt;&lt;br /&gt;&lt;p&gt;&lt;img id="BLOGGER_PHOTO_ID_5364725342756961154" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="http://4.bp.blogspot.com/_FierqiRafWw/SnNVRpSQe4I/AAAAAAAAAFs/ZMtDxs88bcg/s320/SuMmEr+09+011.JPG" border="0" /&gt;&lt;/p&gt;&lt;p&gt;Recipe for: "BAKED ALASKA CAKE"&lt;/p&gt;&lt;p&gt;Ingredients- 1 pkg devil's food cake mix... plus ingredients to make the cake, 3/4 cup semi-sweet chocolate morsels (I use the mini ones), 1 pkg cream cheese softened, 1 cup powdered sugar, 1 container (16oz.) whip cream thawed&lt;/p&gt;&lt;p&gt;1. Preheat oven to 325.  To get the dome shape I baked it in my Classic Batter Bowl from Pampered Chef... any oven safe mixing bowl would work.  Be sure to spray or grease and flour the bowl.  Bake for 1 hour and 15 minutes or until you can pass the "toothpick test."  Cool for 15 minutes in bowl.  Run a knife around the edges and remove cake from bowl.  Let cool for 3 hours.&lt;/p&gt;&lt;p&gt;2. Using a knife, cut cake horizontally to make even layers.  You may have to cut down the cake to make it even to stand before cutting the layers. &lt;/p&gt;&lt;p&gt;3.  Set 1/4 cup of chocolate chips off to the side while putting the remaining into the microwave to melt down.  I normally will put them in for 20 seconds at a time then stir to prevent them from burning.   In another bowl... soften and whisk cream cheese.  Add powdered sugar and mix until smooth.  Stir in melted chocolate.  Fold in 2 cups of whip cream as well as the 1/4 cup of chocolate chips you set aside.  Mix up until completely blended.  Spread the mixture between each horizontal layer of cake.  &lt;/p&gt;&lt;p&gt;4.  Spread remaining filling over outside of the cake.  Frost cake with what is left of the whip cream.  &lt;/p&gt;&lt;p&gt;5.  I formed peaks on the outside of the cake using a spreader... I am sure you could use a butter knife to get the same effect. Who Knew??</title><content type='html'>&lt;div align="left"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="left"&gt;So, a few months back, my bff and I decided to plant a garden. We both love fruits and veggies and our husbands do not. We thought a small garden was a great thing for the both of us to enjoy together. We figured it was more cost effective then buying them in the store and just watching them rot because we couldn't eat it fast enough alone. But we didn't just plant any ole' garden. We got creative and challenged to try it a new way. My grandpa had seen this strange garden idea at a Home and Garden Show in town and shared his info. We thought we would at least try.&lt;br /&gt;&lt;/div&gt;&lt;div align="left"&gt;We have had a pretty successful go at it. We have had plenty of large zuchinni, beautiful red tomatoes, cute little watermelon buds, yummy cucumbers, and pumpkins we can't wait to carve.&lt;/div&gt;&lt;div align="left"&gt; &lt;/div&gt;&lt;div align="left"&gt;I had to share this incredible garden idea! This is great for those of you who may rent your home, live in an apartment, or just would like a small garden without the work of tilling up the ground. We spent 10 days fertilizing and keeping the area watered. Then we laid seeds down and put about an inch or so of soil on top. We also implanted the tomatoes. We only used the soil from the plastic containers we bought them in... we didn't add any extra. We water the garden at least once a day and once a week add fish emulsion to the feeding. I have to be honest though... the &lt;/div&gt;&lt;div align="left"&gt;fish emulsion smells terrible and I might have only done that a handful of times. &lt;/div&gt;&lt;div align="left"&gt;&lt;br /&gt;So what makes this garden so interesting and incredible?? All the fruits and veggie implants or seeds were planted into STRAW BALES. Pretty crazy, huh? I might have acted like a "kid in a candy store today" while enjoying my trip to HyVee. Weird, I know. But I will explain...&lt;/div&gt;&lt;div align="left"&gt; &lt;/div&gt;&lt;div align="left"&gt;I, a few posts back, mentioned my recent switch back to my gluten-free diet because of my diagnosis of Celiac Disease. When I was first diagnosed, back in 2001, I had the hardest time finding GOOD gluten-free food. There is quite a bit of gluten-free specific food at health food stores; but sometimes I don't have the time to frequent 3 or 4 different grocery stores each time I go shopping. I don't mind going to 2 different places... which I often do. But 3 or 4 is just ridiculous! &lt;/div&gt;&lt;div align="left"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="left"&gt;HyVee has a fabulous selection of health foods which so conveniently contain g-free specific foods as well. Things have come a long way in the past 7 years for sure!! There have been two things I knew I would have to immediately give up when I went back on my diet. Pizza and Desserts. I hated the thought of that. Back in 2001 I had tried a lot of the g-free specific mixes for pizza crusts, cookies, cakes, and brownies. All were absolutely disgusting! So I still had that mentality. &lt;/div&gt;&lt;div align="left"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div align="left"&gt;Lately... I have triumphed over that stigma! Godfather's Pizza here in town is now serving G-Free PIZZA! How fabulous is that?? And it's yummy too! Also, Betty Crocker came out with new box mixes for chocolate chip cookies, yellow cake, chocolate cake, and brownies!!!!! I can't hardly stand it. I had heard this Betty Crocker rumor and raced to Wal-Mart... it was not to be found. So, my trusty senses said to try Hy-Vee and sure enough all four boxes were there! The display seemed to have a glow above it. I bought all four! I absolutely can't wait to try them. I am whipping up some great new recipes and my family is actually eating much healthier. I've made some fabulous g-free no-bakes, oatmeal scotchies, oatmeal chocolate chip cookies, chicken fried chicken, and chicken fried steak. (It doesn't sound much healthier... but we really are eating healthier I promise... I'm losing weight!) I have been forced to get creative in the kitchen... but I am loving it! Things have been quite busy lately. What a blast all the parties and celebrations were... but I am so glad I was able to catch some "me-time" lately. To relax after it all, I grabbed a lamp shade that I wasn't too fond of and spruced it up. The shade on the lamp I have changed multiple times because I just can't find one I am in love with. I love the shape of this one... but would have perferred it to have a little "umph." I decided to add my own "umph." BLISS!</title><content type='html'>Today is June 17, 2009. So that marks FOUR wonderful years I have been married to my husband. What an adventure we have been on for sure! Not very many people got through what we have been through in the first 4 years of marriage. I thought I would take a trip down memory lane. Better than I had ever dreamed. We returned back to our jobs after the honeymoon, of course. Marc worked nights and I worked days. Slightly trying on a new marriage... but we made it through. Six months in to our marriage my parents &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;seperated&lt;/span&gt; and soon filed for divorce. That was a pretty incredible blow... wasn't expecting it for sure. But we endured. We soon began making plans of going into the ministry. Marc was called into music ministry before we were married. He began taking classes to receive a degree that would look more appealing to churches when we sent out his resume. Marc was working full-time with required over-time and attending school... we continued to endure. We really felt the Lord pushing us not to wait to send out a resume. Although it didn't look to great on paper, Marc is an &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;annointed&lt;/span&gt; worship leader and we believed that the Lord would provide. We moved to Phoenix, AZ to take on our first position a year and a half in to our marriage. Having no one but each other during this time... we thrived... we grew closer than ever. We soon realized that the position we were in was only for a season. &lt;/p&gt;&lt;p&gt;While we were in Arizona we found out we were EXPECTING! We were so so excited, but knew that there were some things happening at the church that made us think twice about starting a family there. We decided to move back home after 6 short months in ministry. We saved up enough money to move and be fine for a couple of months while we looked for jobs. I knew I wasn't exactly going to get my dream job being pregnant and all. A few friends flew down to help us move back home across country. A day before the move we decided to go sight seeing one last time and show our Kansas friends around before we left. During the "tourist time" Marc broke his ankle... not just broke is ankle, but broke broke his ankle. It set us back quite a bit from "our plan." We visited the ER in Phoenix and they applied a temporary cast to keep him from causing more damage. We were allowed to still travel as planned. Just with a little creativity. &lt;/p&gt;&lt;p&gt;Good thing our friends flew down to take care of us! I was pregnant and throwing up on the side of the road while Marc was traveling on a broken ankle that had to be kept propped up in the car. We traveled for 26 hours!! We arrived back in Kansas with no place to live, no jobs, a broken ankle and pregnant. Whew... but we endured!&lt;/p&gt;&lt;p&gt;Marc had surgery 2 days after we got back. I remember the surgeon asking if we had insurance. Then he proceeded to tell us... "Well, you know, this is going to break the bank." Thank You kind doctor!! There wasn't much of a choice here. We ended up several thousands of dollars in debt. It makes me sick to my stomach just thinking about it. I found myself just asking God ... "What is going on? Why are You doing this to us? We are trying to follow Your will? Have we missed it?" &lt;/p&gt;&lt;p&gt;Well, I can tell you know... WE HAVE ENDURED and we didn't miss it. It was all in God's timing. We are debt-free from the hospital bills. We received several write-offs and have paid the rest in FULL! We have a beautiful, healthy baby girl who lights up any room she walks in to... not really a baby anymore though. She is 18 months old. We are both enjoying our dream jobs for sure. Marc is in full-time ministry at the church he grew up at while I get to stay at home with our Little Red Riding Hood. Without enduring through all our hardships we wouldn't have appreciated where we are now as much. The Lord has carried us through for sure! He has been faithful. &lt;/p&gt;&lt;p&gt;Although these past four years haven't been as blissful as I would have dreamed, I couldn't imagine it any other way. Really, I can't. We are who we are today... and we're at where we're at today because of it. I don't want to be anywhere else! &lt;/p&gt;&lt;p&gt;You might be thinking, "So Momma Giff, if today is your anniversary, why are you blogging?" Well, ladies... my husband is sick... on our anniversary. Kind of a bummer. Our plans to celebrate it are for this weekend though... so he better be feeling better by then!! Esther 1:20 (NIV)&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;I was listening to K-Love earlier today while I was alone in the car.  I &lt;em&gt;love, love, love&lt;/em&gt; K-Love!  I love the music they play and the little snippets of encouragement in between songs.  Today one of the snippets pierced my heart.  Every once in a while a lady from Proverbs 31 ministries will share a little story, a scripture, and practical application.  Today, Renee Swope, spoke about respecting her husband.  She mentioned that she lost a little bit of respect for her husband when he would sit and watch a football game or when he would do things not quite like she expected. &lt;br /&gt;&lt;br /&gt;I have found myself lately getting frustrated at Marc for silly things because of my unrealistic expecations.  In turn, I have said some pretty silly things and reacted in ways that I am completely ashamed of.  While listening to what Renee was saying on the radio snippet, I teared up fully knowing I had been disrespecting my husband.  In turn, I was disrespecting the Lord. &lt;br /&gt;&lt;br /&gt;My husband deserves respect.  He deserves my honor.  He is an INCREDIBLE man with and incredible love for myself and Miss Mae.  He puts the Lord first and foremost in his life.  He works hard to provide for our family.  I am SO BLESSED to call him MY husband! &lt;br /&gt;&lt;br /&gt;Tonight, as Marc was getting ready to go to bed,  I shared with him what had happened in the car.  I apologized to him and I could tell it did his heart good.  He was very sweet about it, kissed my hand, smiled and said "Thank you.  Good night, my love." &lt;br /&gt;&lt;br /&gt;I found this prayer on the Proverbs 31 website.  This is the cry of my heart tonight!&lt;br /&gt;&lt;em&gt;Dear Lord, I want to be a woman who honors my husband, but it’s hard when that means giving up my desire to be right. It's a major bummer for sure... but sometimes you just have to roll with the punches you are thrown. Celiac is a disease concerning the small intestine. In short, I am unable to digest certain foods containing gluten. Gluten is found in flour, wheat, barley, and rye. There is no pill or treatment for this. The only thing I can do is stay on a strict diet avoiding those foods. Yes, that means no cookies, cakes, pastas, or breads. Bummer huh? While I was pregnant my symptoms disappeared and I began eating those things again. I really felt like I had been healed of it. Recently, my health hadn't been at it's best and I knew why... I just didn't want to admit it. I needed to go back on my diet and embrace it as a lifestyle. NO CHEATING!! It is what is best for me... If I don't want to get horribly sick.&lt;br /&gt;&lt;br /&gt;I had stayed up late one night a couple weeks ago and found myself watching Greta Wilson...weird I know. But one of my favorite tv girls was being interviewed and it sparked my interest. I am an avid watcher of "The View." My husband makes fun of me all the time... but I LOVE it! Elisabeth Hasselbeck is my absolute fave. We were pregnant at the same time and I had a blast just listening to her chat about things (like how envading the breast pump is) while I was having the same thoughts. She was so relateable for me. So how does Celiac and my love for Elisabeth Hasselbeck go together?? I found out that night she has CELIAC as well!! She has recently written a book called "The G-Free Diet." I have been really wanting the book and had been sharing my heart about getting the book to my sister-in-law, Gretchen.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p&gt;&lt;img id="BLOGGER_PHOTO_ID_5340239662725506562" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 240px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="http://4.bp.blogspot.com/_FierqiRafWw/ShxXrfA0pgI/AAAAAAAAACk/MsabASZlvUo/s320/gfree.bmp" border="0" /&gt;&lt;br /&gt;On to the best friend part... Sunday night, as I was getting ready to crawl in to bed, I noticed the book on my pillow. I said to Marc, "Awww... when did you do this for me?" I thought he was being super thoughtful. He replied with, "Do what?" I answered back, "The book." He said, "I don't know anything about any book." I opened the book and in it was a very sweet and encouraging letter from Gretchen. The case of the gifted book had been solved! It was Gretchen.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;Not only is Gretchen my sister-in-law, but she is my partner in games we play against the boys, she stands up for me when the boys are picking on me, she's my craft buddy, shopping partner, listening ear, and best-friend. I have yet to tell her that she has that last title... but, I think she knows. That gift, although very simple, made my week. I haven't been able to put the book down since!! I LOVE to cook for my family and changing things has been a little difficult. We love us some homemade chicken and noodles, pot pies, chicken fried chicken, and cookies fresh out of the oven. All of which I can't eat now. This makes me a very happy momma. I don't have to bribe her or tend to a picky eater. She will eat ANYTHING!! Her passion extends especially on to ketchup. If she can dip it in ketchup, she will inhale it. Sometimes Miss Mae chooses to try to drink it. Yuck! But it makes her happy.&lt;br /&gt;&lt;br /&gt;Fridays are my favorite day of the week. It's my favorite guy's day off and we always make sure to spend it having some family fun-time. We stopped off to have lunch at Wendy's this past Friday. We felt is was a perfect choice to endulge Miss Mae and her ketchup passion. We ordered nuggets and fries for her and every bite was taken after a dip in her ketchup pool. Sometimes her dips would go well up to her knuckle, but she was always sure to lick it all off before the next bite.&lt;br /&gt;&lt;br /&gt;Not only does Miss Mae have an incredible love for ketchup... she also has an incredible love for her daddy. It takes a special person for her to share her ketchup with. Friday she did just that. Although I am not quite for sure how often I may write or if anyone will even read; I'm hoping that this will develop on it's own and become my own therapy and time to collect my busy thoughts.  So here goes nothin'! &lt;br /&gt;&lt;br /&gt;Yesterday Miss Mae did something that only would make a Momma proud.  She went potty on the big girl potty for the very first time!  You see, the crazy thing is, she is only 17 months old.  What an incredible feat!!  At least I think so.  I have been taking her and sitting her down every once in a while when I visit the restroom.  She normally will get a book out and "read."  It's almost as if she felt as though it were a nice chair to sit on just to read.  But I guess she does get it!  When I sat her down she stared straight at the wall and didn't move a muscle.  Her eyes didn't even blink.  It was though she was completely stunned.  Even as I started to actually hear the "tinkles" she didn't move.  All I could do was laugh!  A few tears came to my eyes and I excitedly told her "YOU DID IT!  GOOD JOB!  YEAH!  I'M SO PROUD OF YOU!"  That quickly scared her out of her "potty hypnosis." &lt;br /&gt;&lt;br /&gt;I'm not going to hold my breath that she is completely ready to potty-train, but I will take advantage of the memory for sure!
